Rice is the staple food in Odisha. Most of the Odias prefer rice to wheat as their primary source of cereal. A notable practice in most of the Odia homes is to prepare rice in a special way, such as soaking the cooked rice in water for several hours before it is served. It is called 'Pakal Bhat'. Otherwise Odisha has also a practice of preparing fine cuisine out of rice, such as Kanika and Ghia Anna both of which owe their origin to the Jagannath temple of Puri.
