Review : It was our first experience as a visitor to one of the restaurants which belonged to a wide chain of Odia restaurants under the name 'Dalma' located at various cities. As we finished a nice dinner of typical Odia cuisine we got a feel of the authentic Odia food that one would expect from such a reputed group of restaurants.

The Mahurali Besara ('Besara' of tiny fish) served to us made our day. Combined with Badi Chura, the Dahi Pakhal never tasted as great else before.

Given the 'Dalma' model, does a restaurant venture based only on the traditional Odia cuisine, make it viable proposition? we asked Mr. Sanatan Tripathy, the Asst. General Manager of the company. He replied with an emphatic yes, citing the impressive daily turn over in one of their outlets. We saw a ray of hope there. Why do our entrepreneurs in the restaurants sector ignore the traditional Odia foods as a part of their successful business model? 'Dalma' has shown the way by proving that it is very much viable. Odia cuisine can establish itself as a prominent and popular genre if our entrepreneurs come forward to patronize it in an exemplary manner, the way 'Dalma' has done it.
